Healthy Honey Bunny Banana Pancakes

Ingredients

For the pancakes

  • 4 Eggs - yolks and whites separated
  • 250g Bananas - mashed
  • 170g Almond meal
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1 tsp Coconut oil

For decoration

  • Banana
  • Blueberries
  • Strawberries
  • Apple

Cooking Method

  • Take a large bowl and mix together the egg yolks, banana, cinnamon and baking powder.
  • Beat the egg whites with an electric mixer until stiff peaks form. Fold the egg white into the banana batter.
  • Into a non-stick pan add 1 tsp coconut oil. Pour the batter into the pan - making 2 small pancakes for every one large one.
  • Cook for approximately 2 minutes either side.


Decorating

  • Cut a banana long ways to create the ears and cut another one into rounds to create the eyes. Cut strawberries to create the nose.
  • Take an apple and cut thin strips to create the whiskers. Use blueberries for the pupils.
  • Drizzle with honey just before eating - and enjoy!
