Healthy Honey Bunny Banana Pancakes
Ingredients
For the pancakes
- 4 Eggs - yolks and whites separated
- 250g Bananas - mashed
- 170g Almond meal
- 1 tsp Baking powder
- 1 tsp Cinnamon
- 1 tsp Coconut oil
For decoration
- Banana
- Blueberries
- Strawberries
- Apple
Cooking Method
- Take a large bowl and mix together the egg yolks, banana, cinnamon and baking powder.
- Beat the egg whites with an electric mixer until stiff peaks form. Fold the egg white into the banana batter.
- Into a non-stick pan add 1 tsp coconut oil. Pour the batter into the pan - making 2 small pancakes for every one large one.
- Cook for approximately 2 minutes either side.
Decorating
- Cut a banana long ways to create the ears and cut another one into rounds to create the eyes. Cut strawberries to create the nose.
- Take an apple and cut thin strips to create the whiskers. Use blueberries for the pupils.
- Drizzle with honey just before eating - and enjoy!
