Salmon Ingredients
- 4 single serve salmon fillet portions - boned
- ¼ Cup Chipotle sauce
- ¼ Cup Mānuka honey
- 40 gms butter, melted
- ½ Teaspoon smoked paprika
- Fresh thyme leaves
- Lime wedges to serve
Salad Ingredients:
- 1 small cucumber peeled into ribbons
- ¼ red onion, finely sliced
- Fresh dill or parsley
- Apple Cider Vineger
- Mānuka honey
Method
1. Pre-heat oven to 190° C and line an oven tray with baking paper.
2. In a bowl combine the chipotle sauce, Mānuka honey, melted butter, paprika. Mix well.
3. Arrange salmon fillets on the lined tray and pour over glaze.
4. Top each with a thyme sprig.
5. Bake for 5-8 minutes or until just cooked through in the center and caramelised on top.
While cooking, prepare salad.
Simple Pickled Cucumber Salad
Combine cucumber, onion, dill/parsley in a bowl.
Dress with a splash of apple cider vinegar and a drizzle of Mānuka honey.
Season with cracked pepper and sea salt.
