Spiced Honey Nut Brittle
Indulge your senses with this delicious Spiced Honey Nut Brittle. The Mānuka honey gives a depth to the flavour of the brittle, which is then enhanced with the subtle spice of the chilli, then offset with the light salt flavour. A tasty on hand snack, something to delight your guests with or a scrumptious homemade treat to give this festive season.
Ingredients
- 1 C (250g) mixed nuts of your choice
- 3 Tablespoons (45 mL) Comvita MGO 30+ Mānuka blend honey
- 1 teaspoon (5mL) canola oil
- 1/4 teaspoon of following spices:
- Chili powder
- Ground cardamon
- Ground cinnamon
- Ground nutmeg
Method
- Line a small baking tray with parchment paper and set aside.
- Gently heat honey, oil and spices in a medium fry pan over a medium heat.
- When the mix begins to bubble, add the nuts. Stir to coat nuts evenly with the honey mixture.
- Cook, stirring constantly, for 4 – 5 minutes, until honey mixture has almost evaporated and nuts are beginning to turn brown. The nuts will also be getting very sticky.
- Quickly transfer the cooked nuts to the lined baking tray, spreading out in a single layer. Sprinkle lightly with salt if desired and let cool. When cooled, break into pieces and transfer to an airtight container. Store up to 2 weeks.
Tips: You can get a bag of raw or salted mixed nuts from most supermarkets – if using salted, then skip adding extra salt. Store in a short jar with a wide opening, as the brittle can stick together. Increase the amount of each ingredient as per the volume of nuts you use.
